About Us
Grizzly’s began its journey in 1995 in Eau Claire, Wisconsin, born from both necessity and heart. The Bonanza Restaurant in Eau Claire was reimagined, and the goal was simple: create a fun, welcoming bar and grill where people could gather, enjoy great food and share a delicious drink.
While driving and brainstorming names for the restaurant, inspiration came from a very special place—one of our children, who suggested a name that immediately felt right. That moment helped shape what would become a brand rooted in family, community and approachability. Thus, Grizzly’s Grill N’ Saloon was born.
From the very beginning, Grizzly’s focused on generous portions, bold flavors and an easygoing atmosphere. The original menu featured hearty half-pound burgers, large portions of fries, a small selection of sandwiches and appetizers and a Tex-Mex section that quickly became a guest favorite. Behind the bar, the focus was just as clear—ice-cold beer and margaritas, served in a fun, laid-back setting.
Fun has always been at the core of Grizzly’s. The original team brought energy, personality and pride to the restaurant, setting the tone for the culture that still exists today.
Grizzly’s entered its next chapter as Grizzly’s Wood-Fired Grill, leaning into wood-fired cooking, smoked meats and the bold, craveable flavors that would come to define the brand.
Today, we proudly continue that legacy as Grizzly’s Grill Smoke & Fire—a name that reflects both where we started and what we do best. It represents the fire of our rotisserie and grills, the smoke in our cocktails and the passion we’ve poured into Grizzly’s since day one.
